  1. It’s canon because it’s canon. The writers didn’t just set the episode in an alternate Universe.
     
  2. Cookies are hardly the most skillful recipe in the world, maybe he isn’t that good at cooking. Or he has never baked an apple pie.

So SaYS is canon when it was an episode that contradicted everything that was introduced about Spike since S1? At least in OWtEW, he was still a pretty competent baker.
