The gem becomes more brittle with age and will grow moss if it spoils long enough. Nobody wants a meal that has the same texture as the Moohave Desert.
Display until - How it looks - Only really useful for shop staff wanting “good, fresh looking” food on display.
Best before - This item will “fade” in someway! eg. cakes may dry out, biscuits/cookies may go soggy, dried stuff may loose flavour potency. Still technically edible.
Use by - This is it, THE deadline, eat stuff after this and you are theorecticly running the risk of starting the “Was it wind?” roulette game. Good luck!
