For what it's worth, Twilight didn't know what happened when she got petrified by a Cockatrice, when it was reversed.
On the other hand, Discord was conscious and could hear everything when he was petrified, but he's well..._*Discord,_* and he probably had other means of gaining information as well.
As for Mudbriar, if he was conscious, well, I'd blame him being an earth pony for that?_*shrug_* (Twilight was a unicorn at the time)
