Torch believes that if they had tried to figure it out, they would have found a solution by now with all those generations of scholars. This is why he is still angry. He didn’t want to be at odds with ponies for so long, but he couldn’t justify anything else to his subjects after taking such a strong stance on the matter.  
The dragons who were alive for the change taught their children about the transgression and are still around today. They are old enough that they’re just not going to let this go, even if it changes back.
 
Either the ponies already have figured it out and think it’d be too dangerous to try reversing it; they have figured it out but don’t want to give up their position as a global super power, or they haven’t looked for a solution because they just don’t think it’s a problem.  
The latter of the options is far more likely than it should be, given how obtuse and self-unaware the characters in the show can be.
 
As for the teenagers who drained the lava lake. I figure they are handling it along these lines:

Talking this latest episode and Queen Cold’s dragon mom OCs, I wonder what happened to Clump, Fume, and the rest when they had to tell their mothers how they almost wiped out the next generation of their species just to make a lava slide? “Hey, Mom, we’re still cool despite my act of ignorant near-mass infanticide, right?”

Ponies and dragons used to be on pretty bad terms. Ponies would disregard the border between Equestria and the Dragon Lands and send their troops through the nation. Dragons in turn would illegally cross the border as well.
Ponies also have knights and fairy tales about dragons and princesses. It isn’t a stretch to assume that at some point some pony knights actually did go after a few dragons.
But there’s more…
Now, the show has confirmed that Celestia and Luna took over the responsibility of raising the sun and moon from the unicorns because performing the spell permanently depleted the unicorns’ magic. There’s hundreds of days and nights in one year and a finite number of skilled unicorns, so obviously this unsustainable practice wasn’t very old.
We do know it started before the tribes got along and the ability to raise the sun and moon was what the unicorns leveraged against the other tribes.
We also know that parts of the world untouched by pony magic have self-sustaining ecosystems. The other kingdoms, the Everfree Forest and even Equestria before the arrival of ponies are proof of this. (Equestria was described as a paradise)
Celestia and Luna were students under Starswirl as fillies, and Starswirl was a contemporary of Flash Magnus before he and the other Pillars banished themselves to limbo.
Torch, who appears to be middle aged, was an adult at the time Flash Magnus and the rest of his squadron trespassed on the Dragon Lands, and there have been Lords before Torch.
Putting all of this information together, I concluded that unicorns seized control over day and night in recent dragon memory, in order to maximize their influence over the Earth ponies and Pegasi, who both controlled things they needed to live: weather and food. In doing this, the dragons were now at the unicorns’ mercy, which I cannot imagine going over well in any situation. Torch would be very vocal about his displeasure with this and instill this sentiment in the other dragons.
Of course, the pride of the dragons being wounded is the best case scenario. Raising the sun and moon would have been a very difficult thing to master and it is entirely possible that the process caused natural disasters and mass panic among the creatures who had no idea why the sky was acting strange.
In any case the ponies seem to be in no hurry to restore the natural cycle and I think that this is a pretty good reason for dragons to be upset with their attitude.
It is in line with what Caldera thinks of them. Caldera doesn’t trust ponies because they act like they are better than everyone else, despite having the arrogance to go where they please and take whatever they want.
 
I love the backstories you give your OCs.
 
In any case the ponies seem to be in no hurry to restore the natural cycle and I think that this is a pretty good reason for dragons to be upset with their attitude.
 
That of course assume that the ponies know how to restore the natural cycle.

It is in line with what Caldera thinks of them. Caldera doesn’t trust ponies because they act like they are better than everyone else, despite having the arrogance to go where they please and take whatever they want.
 
If that doesn’t describe dragon attitude I don’t know what does.
