There’s literally only one notable trait about the Ophiotaurus in the Greek Myths and that’s that burning its entrails would grant the power to defeat the gods. During the Titanomachy, an ally of the titans managed to gut it, but was thwarted by an eagle sent by Zeus grabbing the entrails.
Their emotions taste better when they’re alive obviously.
