I get the feeling that “Seventh element” is in fact the combination of all elements, the tree of harmony itself, since even in Starswirl’s era there were only six elements of harmony, and the tree, which was the source. The seventh element is harmony itself.
And there was also that green colt toy that was sold together with the mane 6 in that pack of seven based on the rainbow.
Well as far as we know, the seventh element has been hidden in plain sight (like in that one episode where spike got greedy) and that there’s no pony, that’ll bere it, until maybe now, hopefully in time a pony will appear to bere it.

If you look at tree in Starswirl’s book, there are 7 elements. All six colors are represented. Plus a 7th color:Green.
