If that’s the case, then I wanna see an episode where Maud explores the caves and finds ancient petrified dragon fossils, which later broke free from their stupor and wreaked havoc on the Equestrian population

While such occurances are considered rare. I would imagine it happens enough for the dragons to be wary of an event of such occurring. Especially in dragons with less than optimal health and genes. A sudden pause to body function can be fatal. In some cases, there might be a chance where a “glitch” in the process would cause the dragon to be entered petrified inside out, killing them.  
You can only imagine the feeling of claustrophobia and possibly pain Spike experienced during that brief episode. He thought he was going to die, on top of that with the thought of his friends being endanger of a giant killer bird attack.

This beg me the question of whether or not there is a chance of failure in the evolution process where a dragon doesn’t come out of this and subsequently die encased in stone?
