I dunno, she seems a little flanderized to me. Before I get pelted with purely metaphorical tomatoes, hear me out.
 
In Season 1, she was brave enough to tell off a dragon, walk into the everfree forest alone at night, and stare down a cockatrice if her friends/innocent kids were in danger.
 
In the latest episode, she doesn’t even go into the everfree in broad daylight, accompanied by her animals. I dunno, it just seemed out of character for her to be like that, and I think they’re just trying to play the “timid and cute” qualities a little too much.
 
Also, since when did she have a teddy bear?

She threatened to whoop Twilight if anything happened to her animals. But she was still scared of Trixie. You would be too if she could just turn you into a potted plant at will.

I think it’s more about the situations she’s placed in more than a personality change. I mean, nothing really feels strange in the Trixie episode except for that one “Look how afraid they are” part.
