Late response, I know, but I kinda disagree that Epona had “more screentime” in Ocarina & Majora.  
They had about the same as in “Twilight Princess,” or possibly even less considering in “Ocarina” you could only use Epona in Hyrule Field mostly, and in “Majora” you could only use her in Termina field, and a few small areas. She really wasn’t that prominent in the N64 games either.  
TP actually had much larger areas requiring her a bit more possibly, and unlike those games you could actually fight with your sword (or other items) on horseback which was an improvement. (As opposed to awkwardly trying to aim with your bow in the N64 games, which takes alot of practice.) I will admit after awhile in all 3 games you don’t require her as much, and it feels like they could’ve done more with the horseback combat feature in TP.  
The “joust” mini-boss battle segments against King Bulblin were quite fun though.

(Actually, I’ve long thought the Outworld Gate is probably going to be the most perfect way to add other Nintendo characters to Fire Emblem Musou DLC, especially since it has already been used by Legend of Valkyrie characters and those guys from Tales of Vesperia in PXZ2.)

Because that’s not an accurate representation of oot epona. That’s just orange epona. There aren’t white felocks, dark legs/ears/nose, or blue eyes. The only reason that’s closer is because she’s orange.

the horse riding in TP was nice. and it was important for some time (until you were able to teleport everywhere XD). but i found that epona from TP just too bulky and not cute anymore. i wasnt able to make any bond to her since you didnt use her for anything really important or quest stuff. epona from ocarina of time and MM had more screen time. and the better color scheme XD that is of course subjectiv. she had like you said a more redish color and black parts on the legs and just more details. and wasnt that boring grey brown all over. way more pleasing for the eye. the only epona here on derpibooru that comes close the original epona is this one here: >>38192  
this is one of the very few ones. but at some point people just getting more and more desaturated and boring with the scheme XD
 
and thats her original scheme by the way XD such a pretty horsey.
