You’re mixing up human hair (and specifically human hair) genetic inheritance with that of winged magical ponies. This poses a few problems:
 
  1. Other human factors do work as a mix; for example, skin color works off various genes from the parents that result in a mix of both.
     
  2. Rainbow’s hair is already multi-coloured, so it’s probably not a single gene controlling it
     
  3. In many non-human species, the rules are completely different; look at what happens to the coats of cats of mixed breeds
     
  4. Rainbow Dash is a magical winged pony from the land of Equestria that can fly at supersonic speeds and can charge up death-laser firing amulets via the power of friendship and loyalty, so yeah

This is clearly just two ponies fused together, not a child. That’s not how children work; if the father has brown hair and the mother is blonde, that doesn’t make the hair half brown, half blonde, nor does it gradient from brown to blonde.
