well, this isnt REALLY the real thing, they are forced to keep the food on top of sheets of wax paper and the like. I know it makes it more hygenic but to me ruins most of the appeal.
 
Some places outlawed the original food-on-skin style because there are very real bacteria you can pick up from even a bathed human body that cause serious illness if ingested.
 
So the wax paper thing is a concession to keep people from getting potentially very sick.
