He has no patience for Dunning-Krueger and false claims, in short.
Or other things for that matter, as Hotel Hell makes clear.
Yeah, it’s a joke based on https://www.youtube.com/watch?v=PV3_UHG73oQ which is Hell’s Kitchen where he played up his loud, angryness. He’s generally a pretty chill, generous guy in every other show he’s ever done. He just has no patience for people who think they’re great chefs who very clearly aren’t.
I think it’s more likely that that quote is from Hell’s Kitchen; even at their worst, Ramsay isn’t nearly so demeaning with the restaurateurs he visits.

Spoiler: No, they don’t actually microwave a salad – probably the one item on the menu they don’t microwave! And, I think Gordon Ramsay is the only person on the planet who can use ‘donut’ as an insult. XD

wait… what? Microwaved salad? He goes to actual restaurants, right? Not people’s houses? A restaurant that microwaves salads seems beyond redemption.
