I think it’s more about what they value than what they are, otherwise Pinkie would be the element of Friendship/Magic.

Actually, I think Dash and AJ should have swapped elements. Applejack has proven way more often that she’s loyal to her friends, her family and Ponyville to the point of working herself to exhaustion. Whereas Rainbow Dash is always painfully honest and isn’t always as considerate about it, often stating bluntly what the problem is.
