Playing devil’s advocate here, most of the incest we see are either between cousins or siblings, in or out of law. They weren’t uncle/niece ships.

Well, taking a look at the story here, it seems like Uncle Stormcloak was, like, one of the only people she really opened up to. Her admiration and feelings may have allowed her to act differently than she did with others. Granted, you’ve got a point that someone else may have been better in this position, but… she’s adorable. Argument totally invalidated.
Wouldn’t a different character fit the role better? Rainbow? Applejack?…
A story should be affected by its characters; the characters shouldn’t be forced by the story. This will make the characters more… alive.
