Did you just describe an actual episode and call it inaccurate?
 
Really though, I know what you mean, and I’d agree. I also don’t care. Most fanfics are based on character drama and Trixie, as she is, doesn’t have any dilemmas in-show. She’s nothing but super-confident and largely uncaring about other people’s feelings except when something really bad happened. As she is, she’s essentially too macho to write a character drama about!
 
So instead, fanfic writers write about something that wasn’t shown. Like how she’s too superior and can’t live an ordinary life. Or that she develops a crush on an ordinary person and has to actually start caring for them. Or that she’s not actually boasting for the fun of it, she’s lying to offset some massive insecurity. That she’s incredibly lonely is the most popular one, simply because it’s the most plausable thing that could happen to her.
 
TL;DR: Trixie boasts about her superiority, shoots lightning at giant space-bears, and is only ever unhappy when someone else beats her in a competition of skill or when she’s semi-insane. You can’t write a character-based drama about that.

She’s usually either a poor lost sniffly puppy who just wants to be loved or a super bitch with magic better than Twilight and is also rich because why not?
