They wouldn’t have done that for any of the ships that ended up being canon or “up for interpretation”. The end of the show was not supposed to be crazy and all ship like, it was supposed to run smoothly. And yes, you’re right. If it wasn’t for the leaks nobody would know about the notes, but some people out there still don’t know about them and believe that Appledash is absolutely canon just from what they saw. For all we could know Fluttershy just randomly moved in with Discord in his house for fun, moving a lot of her animals into a whole different world they would have to get use to. Makes total since, why would they be together right? We didn’t get to see it so it ain’t true. Pinkie and Cheese Sandwich just hugged, that don’t mean nothing since we didn’t see them get married and have a kid. Pinkie could’ve had that kid with anyone since we didn’t see it. And it totally makes since that Dash, the captain of the Wonderbolts that now probably works all the time and just as much as Applejack now, would take the time to move in with her and try and see her whenever she’s not working. Makes total sense to me.

Doing it in earlier episode perhaps and actually having them be an actual on-screen couple not just having them walking and talk about helping with chores and just looking at each other at the very end of the episode and series.  
Also if it wasn’t for a leak most likely wouldn’t even know about the notes

What did you want them to do in an already crammed in episode? Have a whole wedding? Guess we can’t believe that Cheese Sandwich and Pinkie are really together since we didn’t get to see how they ended up together. Not all the staff has been saying it’s up to interpretation, some have even full on put it up with other canon ships. I’d imagine the staff would tell the voice actor that her characters would be together, or maybe she was even the one who suggested it and they said “Sure, we can do that”. Again, some of the staff had most likely said only up to interpretation because they didn’t want to get involved with ship drama while others posted it and confirmed it. Also, editor notes and script were what turned into the canon episode, on the script it had said in note “We actually could do some sort of subtle wink to the idea they are now a couple.”  
There’s been more than enough proof that it would be way more canon than not canon, but you can believe whatever you’d like 🤷‍♂️

Canon is what happens in the actual episode and the staff have been saying it’s up to interpretation a voice actor saying otherwise on a live stream does not contradict that(not even her decision anyway).  
the actual episode the one that was animated and put on TV only teases it. And if that really was how the show confirmed it that was a cop out

Ashleigh Ball said they were married in a live stream not too long ago, said they were gonna live happily ever after in Ponyville together or something like that. Not to mention in the editor notes of the last episode they wanted them to be seen as couple and close together the whole episode. I’m sure they just didn’t wanna completely confirm it because of backlash but it was definitely their plan to make it look canon.
