Applejack:Leafeon-most people would pick Fluttershy but I say Applejack due to being a farmer and have more relations to plants.
 
Fluttershy:Eevee-Fluttershy would love all the Eeveelutions but I think she would keep Eevee the way it is.
 
Rainbow Dash:Jolteon-One of the fastest Pokèmon that’s obvious for Rainbow Dash to pick.
 
Rarity:Glaceon-I can see Rarity fawning over how glamorous it looks also getting inspiration from it.
 
Pinkie pie:Sylveon-Pink appearance aside good vibes all around.

It always struck me as odd how near-perfectly the Eevee family seems to line up with these characters.
 
 
Applejack: Flareon (Only one that DOESN’T make sense but there is no Ground Type Eevee yet, and at least the colors and more muscular build match her.)  
Pinkie: Sylveon — you even evolve it with love!  
Fluttershy: Leafeon. Pacifistic creature at one with nature.  
Rainbow: Jolteon. Dashie has much to do with lightning. (You ever notice how Dash’s coat can just as easily be described as electric blue, as well as sky blue?)  
Rarity: Glaceon. Maybe something more ideal would be a Rock Type with a gemstone theme, but there’s no denying this thing matches her. Ice is a crystal which is similar enough in appearance to diamonds anyway and Glaceon looks like it wears clothes, and Rarity’s a fashionista. (Glaceon’s also portrayed as the sexiest one by the fandom, so y’know.)  
Twilight: Espeon
 
Vaporeon has nowhere to go (it vaguely looks like Spike but it’s a fish, not a reptile) other than that everybody’s covered 1-to-1.
