Her horn’s there, she’s just wearing the bridal veil and flower crown (which is where you can see her horn, since it covers part of it)
It’s just her mane and coat translate really poorly to monochrome and blend together

The reason why they were “guaranteed couple” was because fanbase back then shipped them almost religiously. At the beginning they were just random ponies, just like Derpy was a random animation error.
The reason they only hinted is because them confirming a same-sex couple on anything but the final episode would’ve resulted in some pretty bad stuff for the future of the show (Which is a moot point for the final episode). I mean, since about Season 4 it’s been painfully obvious the staff counted them as a guaranteed couple.
