Sif would attack either way, for two reasons:
1- He’s honor bound to the grave, in honor of Artorias.
2- The other cutscene shows Sif reluctantly fighting the player. He doesn’t want to you to become what Artorias became, and would rather kill you than let you become a pawn of the Abyss.

So yeah, he would fight either way.

And yes, she’s an undead.

She could actually probably talk Sif down. Tell her that it’s over. She knows its sad but, she needs to move on. Let her have the ring and she can make things better.
