And, uh, as far as the herd structure goes? As far as family units, they appear to be primarily monogamous like us.
As far as having a herd mentality as a society? That’s pretty much impossible to determine, and would require analysis of pony psychology that just can’t be done with current resources. I wouldn’t call it guaranteed though, given that the ponies of MLP aren’t necessarily reliably comparable to the horses in our world.

Shining Armor is prince consort. You are right that this means he’s only a prince because of marriage, but it also means that’s likely the reason he’s not an alicorn, besides the fact that it has to be earned by doing something special, whatever that is.
The Wonderbolts have had male leaders in the past. See; Testing, Testing 1 2 3.
While I still strongly believe it’s never possible to be totally sure, I think there’s significant evidence pointing towards egalitarian rather than matriarchy; celebrities, nobles and other rich ponies, common government roles (mayor of Ponyville is the only mayor we’ve seen, though the Duke of Appleloosa was a stallion in the comics, I think), and just plain old careers. Ponies of both genders appear totally socially and economically equal, and we haven’t seen enough of actual leadership roles to say much about this. Still, who knows how it works, especially with the specifics.
I merely disagree with the notion that it being a matriarchal society is canon, because that’s calling it fact when in reality it’s very much up for debate. By calling something canon, you’d essentially be ruling out the alternative possibilities.
Speaking of taking cartoon horse show culture too seriously, I think it’d be like certain tribal or nudist camps. Being naked and walking around with your floppy wiener is fine, but having a full staff boner is a faux pas.

I think Faust mentioned this on her DA a long time ago. Horse herds (and most mammalian herd species in general including aquatic ones, afaik) are led by alpha females. Equestria seems to run this way too. Not even just the princesses. The mayor. The Wonderbolts. The farms (Cherry Jubilee, the Apples). The founders were six females. Shining Armor is a prince but he’s just along for the ride when he married Cadance. Chrysalis is a pseudo-Equine.
I’d agree at least in the show it’s a soft matriarchy though. Although I’m amused by ideas to explain the bizarre sex ratio in crowds like they abort male babies like China and India abort female ones.
i think from what i can see they’re not reacting that way just because they can see it but rather that its small…. thats why RD is unamused, thats why derpy and rainbow shine seem to have a look of curiosity rather than embarrassment. and twilight being the FOREVERAPONE that she tends to be, she never gets to see stallion ever regardless of size therefor she goes into tsundere overdrive.
