that idea put a thought in my head. what if she has changed, but part of molestia is still there. like her body still does molestia related things, cuz that’s what it remembers and it’s instinct for her. like there is a little bit of molestia still inside of her? NO PUN INTENDED!

Phew, I was worried that she’d end up rather generic, but it looks like she still likes to mess with her sister, just in a more G-rated way, which I am totally down for.

This may be true, but this implies that the playful nature of Molly still exists somewhere in Celestia. You can see that she’s just faking being so clueless to mess with Luna.
 
I believe that Celestia is deliberately faking amnesia, and is hiding who she is so she can have a chance at a normal life.
 
In short, she’s pulling a Sly Cooper.
