Ingredients

1-2lbs chicken breast(cut up)or strips

1-2 cups Cheddar crackers(Cheez-it)

1/2 cup Dijon mustard

2-3Tbs olive oil

1/2 tsp. black pepper
Directions

1)lower oven rack to lower third of oven

preheat to 475, Brush pan with olive oil.

2)crush crackers (or pulse in food processor)put in bowl & pepper
-
3)toss chicken pieces in mustard and dredge in crackers

4)arrange on oiled pan

5)bake , turning once until golden brown, 15 minutes.
Cook’s Note
- adjust time cooked depending on size of chicken pieces. don't crowd pan. Dips ....... BBQ -jam 1/2c., vinegar & brown sugar MUSTARD -1/2c. Dijon mustard & 2Tbs honey
