Because it’s tacky.
 
You can set up all sorts of elaborate and deadly situations with just a few spells, like telekinesis, teleportation, ‘Want It, Need It’, orange transformation, gravity reversal, and so on. How long does a pony last if you change its anatomy so it can’t eat? What happens if you teleport away only half a pony?
 
A spell that just out-and-out kills the target is simply gauche. There’s no style or flair.

She can do worse things (Plagues, famine, Rioting/Civil War, Cold-Blooded Murder) with her normal magic, so why does a spell that kills the target instantly bother her so much?
