Well that’s like comparing Twilight when she first arrived in ponyville to her now. She’s certainly opened up and does enjoy Pinkie’s parties. (even though she had ZERO interest in the surprise party Pinkie through when she first visited) In Dusk Shine’s current state you’re right, they’re not particularly compatible. If however he changes like Twilight did then I’d say it’s a much more reasonable ship.
It was already established that Dusk Shine has a crush on Fluttershy and that he doesn’t like partying. Sorry, but no compatibility between Dusk and Pinkie.
I’m pretty much a shy, nerdy bookworm (except I don’t really learn through books). Granted Twilight is my favorite because of similar personalities, however just overall I really like pinkie pie even with her incredible hyper spazznes. Fluttershy is cute but I could never see myself with someone that shy and introverted. (There is no rule book as to what type of people like what other type of people, you can make a good guess but there’s no guarantee)
Book worm meets loud and pushy party girl. The two personalities class too much with each other for them to last as a couple. Fluttershy is a quiet introvert, perfect for Dusk Shine.
I still find pinkie the cutest in those comics, not sure why he fell for fluttershy.

The pony mare form is just cute in general. You’d be hard pressed to point out one that isn’t cute. Granted some have better color and mane designs than others but so long as you don’t include OC’s, they’re all cute.
It’s the eyes and the nose I think.
Those are the things that more or less separate mares and stallions at a glance and well, they’re just plain cuter on a mare (probably because of the eyelashes and the curve of the nose).
