I am human, hear me err.
Pinkie seems to have so many aprons, all white, and all with a pink valentine on them. If she hangs them in a closet, it’d be easier, I imagine, to steal one from there while she isn’t noticing.
 
Of course, on the other hand, this could be the work of Applejack, borrowing the apron temporarily with every intention of giving it back when she’s done.
