It's less specific than you might think. When I first started watching the show and I saw all the bright colors and rainbow horses and I knew they weren't going to show blood I had the headcanon that maybe the ponies blood is also multicolored.


 
It just makes sense with the general theme to assume the ponies are made of candy (e.g. Rarity marshmallow) and rainbows (remember rainbow factory?). And gore is just something very basic that comes in all shapes and sizes.
