I’d put the chapter books just above the comics, if only because Berrow crossed over to the show. And as a footnote, the movie should count as part of FiM, even though it wasn’t branded as such.

Yeah, even if I think I think this book is “canon” at 4th degree (not really that canon, I always think both FiM and EqD as “the ultimate canon”), so if FiM or EqG speak otherwise. It will it more canon than this book

It is. Only things that are 100% canon are all FiM episodes and all EqG movies and other material. Other things, like books and comics, need confirmation. :P

We don’t even have a consistent idea of what the EqG world is like outside of the main city setting of the series. Meanwhile the world beyond Ponyville and Equestria have been fleshed out over the years.

We don’t even know much of Sunset’s pony past either. She’s a beloved character in the fandom, a well defined protagonist of a major side canon of the series. Yet we don’t know much about her personal history.

Well, I really doubt EQG!Sunset is in Crystal Prep, at least till recently, as Sci-Twi or others would recognize Sunset.
Sunset being nicer in 9th grade, it might had been Sunset more hiding her motives, and being less villainous. And overtime, because of her desires for being alicorn, an taking revenge on Celestia, became more and more vicious, as well as dropped the pretense of being nice. Rather than previous Sunset, being the EQG! Sunset.
One possibility I thought though, was that Sunset lives in another city, or even country. When I first saw the Sunset Sushi figure, I thought it may mean Sunset lives in EQG!Japan.(I mean, before Good Vibes came out.)
Another possibility, is that Sunset is a Multiversal Singularity, or doesn’t exist in every universe, for some reason.
Another theory, tied to that, is that Celestia could have created Sunset with magic. Because of that, her having a counterpart in the human world, could be impossible.
Celestia’s inspiration/counterpart from G1 (comics and toys, not cartoon though) Majesty, created her child - Baby Lucky with with magic.
To further elaborate why I think so - we know very little of Sunset’s family, and when she was lost after losing her memories, she called out first to Celestia. Young (Teen) Celestia was also stragely similar to Sunset before her redeemption, or when shown in prequel comic, as shown in the canon Legends of Magic comics:
One question that’s never answered is where is original EQG!Sunset Shimmer? We’ve seen Twilight’s AU duplicate, so did Sunset Shimmer replace herself? Maybe EQG!SS goes to Crystal Prep? It’s one of those unanswered questions though I feel like someone mentioned in the first EQG movie that Sunset Shimmer was nice in 9th grade but became increasingly Machiavellian as the years went by.

Well, possibly, but not to a degree I think it’s in any way notable.
As I mentioned bellow, Jonathan might be just a distant cousin, making whatever incest factor, negligible then.
The book’s/accesory’s writer, Susan Ring also only wrote this book ever for MLP, and Jonathan is only mentioned here, so his canonicity is at best debatable.

To be fair, that was what she stated, and it does fit with her words from the first movie:
Sunset Shimmer: [to Twilight and friends] Spoiler alert: I was bluffing when I said I was going to destroy the portal. I don’t want to rule this pathetic little high school; I want Equestria!
This indicates Sunset originally didn’t find to much value in the school, it’s staff and students, including aparently Flash.
And the rest of Sunset’s actions, kinda confirm it - you know with Sunset was all suportive of Twilight and Flash, and only happy for them.
