It’s called interpretation. Until proven otherwise, that’s a perfect replication of a female minotaur. Also, style changes between artist and canon versus fan-made, so it’s a petty complaint.

Minotaurs are canon, bushwoolies and catrina are from the original series, which tends to be worked into canon at some point, and there are tons of giant monsters lurking in the waters of equestria (the hyrda).
