Maybe it’s ultraviolet? I have a headcanon that ponies can see UV light.
I like this theory. Might explain why her hair looks the same pattern at certain angles. (Like “sprite swapping” in old video games.)
Also, nobody’s questioning how she plucks a hair with hooves? :P
I would love to see a pony with an iridescent mane. that’d be awesome.

Maybe it’s just iridescent, and as the light plays off of it at different angles, the various colors appear.
“rainbow” is a color in the MLP universe, though, as seen with her mane, actual rainbows, the joke cookies…
