Now I wonder if like Discord, Amore was/is aware the whole time. I wonder what the whole ‘turned to crystal, shattered, hurled to the winds, and left like that for over a thousand years’ did to her mental state?

I can’t say I’m a huge fan of this outcome, but in all fairness it does line up with the lore they established back in reflections; An influx of good in one universe precipitates an influx of evil in the other, and vice versa.
 
Reflections ended with Good Sombra turning evil, so I suppose it was only a matter of time until Evil Sombra turned good to maintain the balance.

So if I turned someone into a stone statue and dropped them in the middle of the ocean, but didn’t kill them I’d still be a good person? Good to know.
 
Sombra shattered Princess Amore into countless pieces a thousand years ago, seems like it would be hard to gather then all without a lot of contrived coincidences.

Just so she can go back to the Crystal Empire and give Cadence the boot because technically, Amore is still their ruler and Cadence is an usurper.
