Thing is, if moments like that stop being rare, they stop having the meaning they have because they are so rare. Maud is the one whose unexpressive personality hides a great deal of depth and (for lack of a better word) humanity. If she shows too much emotion compared to her established norm, even coming up to the level of your average Vulcan in Star Trek, she kinda stops being Maud.

Practically, it was a moment where Maud froze momentarily as she saw the moment of “My sister is going to die.”
Not very many stoic individuals can remain stone-faced when they watch a sibling facing imminent doom. Luckily, Maud got on it and saved Pinkie before the worst could actually happen. So there’s a legit reason why she has this face.
