In Dark Souls lore, an Undead can still look like and function as a human, as long as he can keep to his Humanity. However, every time they die, they slip away farther and farther from their Humanity, until there is nothing left and they become Hollow, a mindless zombie.
 
 
Solaire of Astora is quite the character. He a worshipper of Lord Gwyn, God of the Sun, and sees his undeath as an opportunity to travel to the land of Lordran, where the gods once dwelt, now overrun with Undead. He’s pretty much the only friendly character in Dark Souls. The only one who’s not out to kill you and pillage your Humanity. All he wants is his very own Sun. Which is why he’s consistently shipped with Princess Celestia.
