Believing that she has come to depend on her magic too much, Princess Celestia has challenged Twilight to find a life outside of it. As Usual, Twilight has over-reacted, and it is up to her friends to put her back on course.

But she’s the one who gets angry when you imply farmwork is earth pony work. So does she or does she not want to be stereotyped?
I can also think of way to make Twilight relieve stress without just replacing it with the stress of too little sleep, too much work.

No, I think Applejack’s on to something here. Farm work may be physically demanding, but exercise is good for relieving mental stress, and right now Twilight’s got a LOT of mental stress that needs relieving.
That, and if Twilight wants to learn how to live like an Earth pony, bucking apples at Sweet Apple Acres is as good a place to start as any.
I think Applejack completely missed the point of getting Twilight to relax. Farm work is not relaxing, and they shouldn’t rope their emotionally distressed friend into it.

Or she wants her bed covered in gravy. She’s half-asleep so it could be either.
