I thought up of this alternate universe where Diamond Tiara is a pegasus and Silver Spoon is an unicorn. They bully Apple Bloom for not being able to fly or do magic, rather than bully her for not having a cutie mark.

Yeah, this is pretty much what would happen. The root personality type doesn’t change when the original expression of it is blocked off.
